Armchair travel is a popular appeal for a wide range of readers. Nancy Pearl recently published a new entry in her popular Book Lust series which helps gather these books all in one place. In Book Lust to Go: Recommended Reading for Travelers, Vagabonds, and Dreamers, Pearl groups the books by country or region and includes fiction and nonfiction. These are not the guides to read to plan your trip, but they are the books to read to immerse yourself in a place whether you are visiting there or not.
It is also a good resource for book discussion groups who want to "travel the world" through the books they read. In fact, on Book Browse, Kim Kovacs and a few people in her book club took on a challenge of going "Around the World in 80 Books." She did it, reading 80 books, each set in a different country, all in one year. Her reading list has been posted in Excel form in this post.
Between these two resources, you can keep your armchair travel readers busy and happy for quite a while.
